While there are dozens of varieties of sausages in Spain, this combination provides a good way to try a few of the most famous. For chorizo sausage, smoked paprika adds a rich red color and smokey flavor. Our Soria is made with large chunks of pork for a meaty flavor with less fat. Salchichon is flavored with black pepper corns. It has a milder flavor though the pepper adds a kick. The sobrasada sausage originated on the island of Mallorca. Because of the warm climate, this style of sausage is less cured and much softer.
