In late summer the kitchen garden of every Ligurian home brims with fresh, sweet basil. More than once Ive watched my friends there turn their fragrant harvest into a spicy, mouth-watering Pesto, which they make by hand. The mortar and pestle gave this garlicky sauce its name.
