Description: Boudin is a type of link sausage that usually contains pork, pork liver and rice (rice dressing) and lots of spicy cajun seasoning and vegetables stuffed into a natural sausage casing. There are also varieties made from different meats, including seafood. Boudin is found all over Louisiana, but particularly around the Acadiana/Lafayette area. It is eaten as a snack or for breakfast, lunch or dinner. Easy to prepare by steaming the links. Squeezed out of the casing and eaten alone or with saltines, the taste is out of this world.
